The global dairy demand has changed as there are more consumers, which are also more demanding and set a real challenge for both dairy farmers in the region and industry. Likewise, some changes will have to be conducted by private actors. But others will fall into the public sector, such as providing infrastructure for dairy farms. Thus, South American countries could produce and export more milk powder, butter and cheese. It should also take advantage of being the region with the lowest milk production costs in the world in a moment in which the demand of dairy products is constantly growing and South America is potentially able to cover it.

Vidal also explained that consumers demand safer and healthier food, which require a greater concern for the health of the herds on the farmers’ side, and for the safety of products on the industrialists’ side.
